antioxidant protein pancakes

pancakes can be nutrient-dense, prioritise protein, and still fun! this is my trusty recipe for delicious, fluffy, protein pancakes every time.

  • 1 small mashed banana

  • 1 egg

  • 2 scoops clean lean protein

  • 1 Tbsp ground flaxseed

  • 1 tbsp oats

  • 1 tbsp self-raising GF flour

  • 1 tsp cinnamon

  • 1/4 cup water or nut milk

mix all the ingredients together in a bowl and then spoon into a pan in desired sizes.

Toppings:

  • 2 Tbsp blackcurrants

  • 2 tbsp pomegranate arils

  • 1 tsp honey

pro tip: heat the blackcurrants and honey in a microwave for 30sec and put them between the layers of your stack. sprinkle the pomegranate on top!
