Nik’s protein pancakes (gf)
pancakes can be nutrient-dense, prioritise protein, and still fun! this is my trusty recipe for delicious, fluffy, protein pancakes every time.
1 small mashed banana
1 egg
1 serve protein powder
1 Tbsp chia seeds
1 tbsp oats (or another tbsp gf flour)
2 tbsp self-raising GF flour
1 tsp cinnamon
mix all the ingredients together in a bowl and then spoon into a pan in desired sizes.
Toppings:
2 Tbsp blackcurrants
2 tbsp pomegranate arils
1 tsp honey
pro tip: heat the blackcurrants and honey in a microwave for 30sec and put them between the layers of your stack. sprinkle the pomegranate on top!
