easy fish tacos (gluten free)

a quick and light and summery meal for your busy week-night.

  • 400grams gurnard or tarakihi

  • handful of fresh coriander

  • 1 pack tio pablo soft tortillas

  • 150g bag baby spinach

  • 1/2 a capsicum

  • 1/2 an avocado

  • 1/3 of a cucumber

  • 1/2 a small red onion

  • sauerkraut for topping

  • optional red pepper relish (or other)

prep all vegetables by chopping into the sizes you would like for your tacos. a squeeze of lemon over the avocado will stop it going brown.

cook fish in a hot pan (w olive oil) for about 5 minutes each side. when it is cooked add coriander to pan and break up fish, toss so coriander is evenly coating fish.

microwave tortillas and serve immediately.
