green teriyaki beef

sometimes you just want something easy to cook that will give you all of the nutrients you need.

serves 3-4

  • 800g lean beef mince

  • 1 onion chopped

  • 1 tbsp crushed garlic

  • 4 tbsp soy sauce

  • 1 Tbsp fresh grated ginger

  • 1 tbsp mirin (or other vinegar)

  • 3 small or 2 large zucchini - grated

  • 1 bag baby spinach

  • 2 heads broccoli - chopped

  • 1 1/2 cups rice (to serve)

put rice in pot with 3 cups boiling water. simmer for 20 minutes.

Brown onion for 2-3 minutes on a medium-high heat then add beef mince and garlic.

Cook until beef is browned.

Add zucchini and broccoli along with soy sauce, ginger and mirin. Cook for a further 5-6 mins and then turn to low heat.

add baby spinach and stir through. Serve with jasmine rice.
